Quality in Food Processing in View of lntegration with the European Union

Abstract
In the recent years of system transformations vital changes have been noted in the consciousness of people working in various sections of food economy. These changes, among others, brought about a different from the past approach to the problems of quality. The article presents basic trends in the new approach of the European Union to the problem of quality. The article also focuses on the rules of both the HACCP system and the system of ensuring the quality according to the new norms of ISO 9000 series. The problems and achievements of dairies participating in the FAPA assistance projects have been discussed. Implementation of the system of ensuring quality in the Polish dairies, in view of the hitherto experience, requires over two years of intensive work.
