Changes in the Consumption of Milk and Dairy Products

Abstract
The paper contains research analysis and evaluation of changes in the volume and structure of consumption of dairy products in Poland. Another element of this study is an analysis of same tendencies in consumption of dairy products in the European Union countries. The volume of consumption of particular dairy products in the years 1988-1995 was estimated on the basis of the results of the research on household budgets. The research concluded that in the years 1990-1993 there was a rapid fall in the consumption of all the dairy products as compared to the level of consumption in the years 1988-1989. The sharpest decline in consumption has been noted in butter, cottage cheese and cream. In the years 1994-1995 the decrease carne to a halt. It seems a good forecast for the Polish dairy industry. In the European Union countries the consumption of dairy products has undergone changes namely the consumption of milk and butter has gradually dropped. On the other hand, the demand for low fat products /cultured milk, ripening cheeses etc./ has risen.
