Changes in Consumption of Cereals and Cereal Products in Poland in the Years 1989-1995

Abstract
The paper focuses on the analysis of changes in the volume and structure of consumption of cereals and cereal products in Poland in the years 1989-1995. The study consists of two parts. The first one, on the basis of balance sheet data, points out to the tendencies in consumption and using cereals. The other one gives a detailed evaluation of changes in consumption of cereal products in various types of households. The research concluded that socio-economic transformations connected with introducing market economy had an impact on the increase of per unit consumption of cereal products. The level and structure of consumption of cereal products was differentiated in particular types of households. The highest consumption was to be found in farmers households and in the households of pensioners and the retired whereas the lowest in employees households. In the period under study, the share of expenditures on cereal products in the structure of food expenditures rose in each group of households. Expenditures on less processed products dwindled gradually. However, the share of means spent on confectionery and pasta went up.
